Organic Dijon mustard

I have bought the non-organic Dijon mustard in the past. It has white wine as an ingredient. The organic does not contain white wine and lacks flavor. I do not understand why both the organic and the non-organic cannot both contain white wine, as authentic Dijon mustard contains white wine.
